straining without pressure to
separate the curd which is
formed, & sweetening the clear
whey with loaf sugar.--
Forms a safe and grateful
stimulus in typhoid fevers,
& other febrile affections.
[Recipe]. Barley Water.
1. Pearl Barley... .[2 ounces]
Boiling Water... .2 quarts
Before adding the boiling
water, let the barley be swill
washed. Boil it to one half
and strain. A little lemon
juice, & sugar may be added.

[Recipe]. Rice Water
Rice... ... 2 oz.
Let it be swill washed & add to it
Water... ... .2 quarts.
Boil for an hour & half, add
Sugar and nutmeg, as
much as may be required.
----
[Recipe]. Dried leaves of Sage. [half ounce].
3. Boiling water. 1. quart.
Infuse for ½ hour & strain.
Sugar & lemon juice may
be added to suit the taste.

Lemonade.

added, according to circumstan

Tapioca Jelly.
Tapioca. 2. Spoonful
[Recipe] Water 1. Pint
10. Boil gently for one hour, or
until it assume a jelly-like
appearance. Add sugar,
wine, & nutmeg, with lemon
juice, to suit the taste, & case.
[Recipe]. Arrow root. 1. table s. full
11. Sweet milk [half] pint.
Boiling water. [half] pint.
Boil a few moments over fire
Sweetened with loaf sugar
it is one of the best nutri-
ments for children, and
more especially when their
bowels are irritated.

Boiled Flour.
[Recipe]. Fine Flour. 1. pound
12. Tie it up in a linen rag as
tight as possible, and after
frequently dipping it in cold
water, dredge the outside
with flour till a crust is
formed round it, which will
prevent the water soaking into
while boiling. It is then to
be boiled until it becomes a
hard, dry mass.
Two or three spoonsful of
this may be grated and
prepared in the same man
ner as arrow root, for
which it forms an excellent
substitute. ------
